I jailbroke mine for a while but when OS 3.0 came out I went back to being non-jailbroken. It was kind of cool to see what the phone could do but I wasn't really taking advantage of any of the jailbreak features.
Are you doing anything with your phone that you couldn't do without it being jailbroken?

I use a couple file storage apps for work, I also use PDAapp and use my Iphone as a wireless modem for my laptop. There are a few photo apps I use too.

Not risky, my phone has been jail broken for well over a year. You have access to far more applications than the app store. I like mine because as long as I have phone service then I can use my phone as a modem for my laptop, so when I am camping or at a hotel with out internet service I am still hooked up! Plus there are a ton of other apps I use that I can't get through the App store. I use mine a a full blown PDA though.

I really like Pandora. Free internet music with no commercials or talking. You start with your favorite song, artist or genre and it goes plays things similar to that.

SPL Meter (used it for work a few times)
Clock Light (liked the features for use in our rv)
MultiLevel (again, for the rv)
MotionX GPS (It works, but I'd recommend holding out for TomTom to see which is better)
Trails (It works, but I think AccuTerra may work better when it comes out for use in the Jeep)
