Rich hit it right on the head. Until you are over 37" tires, 20" rims will limit how much sidewall flex can happen without tire damage. Additionally, the smaller side wall means you can't air the tires down lower for better ride and traction off road.
You said your truck is the 2019 Sierra. That was a transition year where there were new generation 2019 trucks and left over 2018 trucks sold as 2019 (silverado LD or "classic"). Is yours the 4th generation with the square wheel wells or the 5th generation with more rounded wheel wells and an angle at the bottom of the back door glass?
It looks like for the 5th gen, some of the lift kits require coilovers in place of the front struts to fit 17" wheels. Make sure you have the shop doing the install verify that 17" wheels will fit.
Fender trimming options will depend on the specific vehicle but generally a little bit of trimming will allow for larger tires without needing so much lift. Will depend on a bunch of factors including the wheel and tire combo but often some minor trimming can mean running a slightly larger tire with a smaller/cheaper lift.

My Truck is silverado looks like the 2018 model not the new shape. Thank you again for your knowledgeable respons
